Vorarlberg beer focuses on specialized apprenticeship in brewing and beverage technology

True tradition thrives on appreciation and passing on knowledge: at Mohrenbrauerei, experienced beer professionals share their knowledge and experience with young people. Vorarlberg's oldest brewery continuously trains apprentices in brewing and beverage technology – one of only a few companies in Austria to do so. Martin Lau began his training on August 1. Louis Fink and Simon Maier will remain with the family business even after passing their final exams with distinction. Louis is switching to bar technology and Simon will continue to support the team in the brewery cellar.
A passion for good beer, rare craftsmanship, and regional brewing artistry: an apprenticeship at Mohrenbräu offers all this and much more. The private brewery based in Dornbirn has been training skilled workers for decades, thus ensuring the high quality of Vorarlberg beer. Marin Lau, a talented youngster, started his apprenticeship on August 1 for the 2025/26 academic year. After his first month of practical training at the company, the 17-year-old will head to Klosterneuburg in September to attend vocational school at the Austrian Beverage Institute.
During the three-year training program to become a brewing and beverage technician, apprentices get to know the entire company. They learn first-hand from regional partner companies about hops and malt, as well as how to make juice and lemonade. Enjoyment and variety of flavors are on the agenda in the included training program to become a beer sommelier. At the annual apprentice brewing day, the apprentices brew their own beer. As an “Excellent Training Company in Vorarlberg,” the Mohrenbrauerei scores points with benefits such as free public transportation tickets, a job bike, inexpensive lunch menus, and free drinks from VO ÜS, as well as numerous discounts throughout the state.
Full commitment to the next generation
Close personal support from the five-member apprentice coordination team ensures that individual strengths are specifically promoted. “Quality comes before quantity. Anyone who starts their career with us receives the full support of the Mohrenbräu family from day one. Appreciation and trust pay off for everyone: many of our apprentices are happy to stay. That makes us particularly proud,” reports HR manager Cornelia Vallaster.
Two of them have just passed their apprenticeships with flying colors: Louis Fink and Simon Maier are the newest brewing and beverage technicians at Mohrenbräu. They expect the traditional brewer's baptism in September. Tim Ziolek is another example of success. The 25-year-old graduated from the Bezau business school in 2019 and then began an apprenticeship at the Mohrenbrauerei. Today he is part of the training team. Together with cellar master Julian Schäfer, human resources manager Cornelia Vallaster, apprentice coordinator Nicole Plut and brewer colleague Daniel Münch, he looks after the young brown talent with a lot of passion and commitment.
