Cognac enjoys great popularity in the USA. No wonder that this spirit even has its own holiday: National Cognac Day on June 4th. But what exactly is cognac and why is it celebrated?

What is Cognac?
Cognac is a brandy from France, which is exclusively produced in the eponymous region around the town of Cognac. Strict regulations must be met:
- Only certain white wine grapes may be used for production, especially Ugni Blanc.
- The wine must be distilled twice in special copper stills.
- The alcohol content must not exceed 72 percent by volume.
- The brandy must be aged for at least two years in oak barrels from Limousin.
Depending on the maturation time, four quality levels are distinguished: V.S. (min. 2 years), V.S.O.P (min. 4 years), Napoléon (min. 6 years), and X.O. (min. 10 years). In addition, there is Hors d'Âge, which often matures significantly longer.
