For its 2025 anniversary beer, the traditional Ulm-based brewery Gold Ochsen is breaking new ground and presenting an extremely unusual creation.
This beer brings together two worlds: on the one hand, the Pilsner variety with its slim, light, and easy body and distinctive hop notes; on the other hand, the full-bodied Doppelbock with its strong original wort and malty base. The result is a taste that will win over beer lovers. While the initial taste impresses with beautiful, strong malt nuances, the bouquet transitions into a slim aroma emphasized by alcohol, rounded off by citrus and passion fruit notes. Visually, the Premium Pils Doppelbock “Gold Ochsen Ulmator” impresses with its amber color, crowned by a creamy, compact, and long-lasting head. The alcohol content is 7.5 percent by volume. As the recipe is heavily based on hops, the corresponding varieties were specifically selected and dosed by the Gold Ochsen master brewers. They opted for a relatively new variety, “Tettnanger Tango” hops, and a brewing technique known as cold hopping, which guarantees an intense aroma spectrum.
“Powerful, elegant, lively, fresh, and at the same time delicate in its hop composition—with the hops providing a wonderful foundation for the malt,” is how Bernhard Frey, head brewmaster and technical operations manager at Gold Ochsen, describes the 2025 anniversary beer. As always, the recipe contains three hop varieties from Tettnang, but one was particularly crucial for this year's composition: the new Tango variety, which impresses above all with its extensive aroma spectrum with dominant passion fruit and citrus notes such as orange, tangerine, and a hint of lime. In order to preserve this intense aroma, some of the Tango hops were added during the cold phase rather than the hot phase. Since cold hopping does not boil off the volatile hop oils, this process allows the master brewers to transfer as much flavor and aroma as possible into the finished beer. In the case of “Gold Ochsen Ulmator,” this results in a play of different nuances between citrus notes such as grapefruit, herbal spices, and a delicate, green grassy freshness. This special composition makes the vintage beer the ideal accompaniment to any menu, as it harmonizes with hearty as well as light or sweet dishes.

As every year, the anniversary beer is bottled by hand in elegant 0.75-liter bottles with natural corks and is limited to 1,597 bottles. The anniversary beer is available for €15.97 in the brewery shop on Keplerstraße in Ulm, in the Ochsen shop in Ulm city center, and nationwide via the Gold Ochsen online shop. Both the number of bottles filled and the retail price refer to the founding year of the Gold Ochsen brewery.
