Fermented foods have been part of human life for millennia. Whether it’s kombucha, water kefir, sauerkraut, or vinegar—all over the world, foods are preserved or enhanced through natural fermentation processes. In this process, microorganisms alter the composition of the raw ingredients, affecting taste, acidity profile, and shelf life.

RAW or pasteurized—the difference

RAW (unpasteurized): unheated, must be refrigerated, retains original character
Pasteurized: heated, longer shelf life, stable flavor
